Soba Noodle Salad Recipe

Create texture by cutting each veggie differently. Shave carrots, slice radishes with a mandoline and cut peas and cucumber on the bias.

Soba noodle salad


2-3 bundles of soba noodles, cooked

variety of radishes sliced on mandoline: watermelon radish, purple daikon, mixed radish bunch

heirloom carrots of different colors, shaved

golden beets, shaved

cucumber, roughly cut

sugar or English snap peas

mixed greens

pea tendrils, mixed micro greens and/or edible flowers for garnish


Dressing Ingredients:


1/4 cup rice wine vinegar

1 tbsp soy sauce

1/2 tsp sesame oil

juice of 1 lime

1 tsp chili garlic sauce (optional)

1 tsp fish sauce (optional)


1. Cook soba noodles according to specific packaging.

2. Once cooled, arrange mixed greens at the bottom of a large bowl and drape cooked soba on top.

3. Add sliced, shaped and julienned root vegetables to your salad and dress before tossing together. Enjoy!
