Ingredients
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup Grandma Hoerner's Caramel Maple Pumpkin Pie Filling
- 1/2 cup vegetable oil
- 2 eggs
- 1/4 cup buttermilk
- 1 tsp vanilla extract
Caramel Glaze
- 1/2 cup N'Dulce Dulce De Leche Milk Caramel Spread
- 1–2 tbsp water
- Pumpkin seeds, to garnish
Directions
Step 1
Preheat oven to 350°F.
Step 2
In a large mixing bowl, add eggs, oil and pumpkin pie filling. Whisk until incorporated.
Step 3
Add buttermilk and vanilla extract. Whisk again.
Step 4
Add flour, salt and baking soda. Whisk by hand or beat with a hand mixer just until blended.
Step 5
Spray a loaf pan with baking spray. Pour batter inside and bake for 1 hour–1 hour and 10 minutes, until the center is set and a toothpick can be cleanly inserted.
Step 6
Cool for about 15 minutes. Remove from pan and place on a wire cooling rack. Cool completely.
Step 7
Add dulce de leche spread to a small saucepan over medium heat. Add 1–2 tablespoons of water, or just enough to thin the caramel to a pouring consistency. Remove from heat.
Step 8
Spoon on dulce de leche glaze. Sprinkle pumpkin seeds and serve.
