Mushroom Risotto with Crispy Prosciutto & Sage Recipe
This easy and elegant one-pan dish makes the most of our Porcini Mushroom Risotto Mix and is perfect with bread and a simple green salad.

Ingredients
- 2 tbsp olive oil
- 2 oz prosciutto, thinly sliced
- 2 tbsp. butter, unsalted
- 1/2 cup sage leaves, packed
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 tbsp rosemary, chopped
- 1 jar (17 oz) World Market® Porcini Mushroom Risotto Mix
- 2/3 cup dry white wine
- 6 cups chicken broth, warmed up
- Kosher salt and fresh pepper, to taste
- 1 cup Parmigiano Reggiano or Parmesan cheese, grated
- 1 (12 oz) Essential Baking French Baguette
Directions
Step 1
Heat the olive oil in a large pan over medium heat. Cook the prosciutto for 2-3 minutes, until crisp. Transfer to a paper towel-lined plate.
Step 2
Add the butter to the pan and wait until melted to add the sage leaves. Spread sage leaves evenly across the pan and cook for about 1 minute, until crisp. Be careful not to burn them. Transfer to a paper towel-lined plate. Leave remaining butter in the pan, do not drain.
Step 3
Add the onion, garlic and rosemary to the pan. Sauté for 2 minutes.
Step 4
Add the Porcini Mushroom Risotto Mix and toast for 1 minute. Add the wine and reduce for 2-3 minutes, stirring constantly.
Step 5
Add 1 1/2 cups of chicken broth. Bring to a simmer, stirring constantly. Cook until almost all the liquid is absorbed.
Step 6
When liquid is reduced, add another cup of chicken broth, stirring constantly. Allow to reduce before adding the next cup. Repeat until gone. Cook until risotto is creamy. Season with salt and pepper to taste.
Step 7
Turn off the heat and stir in half of the Parmigiano Reggiano or Parmesan.
Step 8
Garnish the top with remaining cheese, prosciutto and crispy sage. Serve with toasted baguette.
