Ingredients

  • 3 eggs
  • 1 cup mascarpone
  • 8 tbsp sugar
  • 7 tbsp grated chocolate
  • 1–2 dozen amaretti cookies
  • 1 cup espresso, to dip cookies
  • rum, to dip cookies

Directions

Step 1

In a bowl, with mixer at high speed, beat yolks from 3 eggs with mascarpone cheese.

Step 2

In another bowl, with the mixer at high speed, beat egg whites from 3 eggs with sugar until fluffy, about 6–8 minutes. Fold the 2 creams together gently.

Step 3

Add espresso and rum to a shallow bowl and dip amaretti cookies on both sides (don’t let them soak). Add a single layer of cookies to the bottom of your baking dish.

Step 4

Smooth a layer of the mascarpone on top of cookies. Repeat: add another layer of dipped cookies and another layer of mascarpone

Step 5

Decorate with grated chocolate and leave in fridge for 2 hours before serving.
