Spanish Garlic Shrimp Appetizer Recipe

2 tbsp extra virgin olive oil
2 tbsp unsalted butter
1 tbsp minced shallot
2 tsp minced garlic
1 tsp ground cumin
1 tsp paprika (regular, hot or smoked)
Kosher salt and freshly ground pepper to taste
1 1/2 pounds extra jumbo (16/20 count) shrimp
1 tbsp fresh lemon juice
1/4 cup minced fresh parsley
1. Heat a large skillet over medium-high heat, and add the oil and butter. When the butter is melted, stir in the shallot, garlic, cumin, paprika, and salt and pepper. When you can smell the garlic, after about 1 minute, add half the shrimp. Cook for about 2 minutes on each side, until they are cooked through. Transfer to a plate, and repeat with the remaining shrimp.
2. Return the first batch of cooked shrimp to the pan, add the lemon juice and parsley and toss. Transfer to a serving dish and serve hot or warm.
Tip: These have a robust amount of seasoning. If you would like a more delicate flavor, reduce the amount of cumin and paprika to 1/2 teaspoon each.
