Ingredients

For the gingerbread:

6 cups flour

1 tsp baking soda

1/2 tsp baking powder

1 cup unsalted butter

1 cup packed brown sugar

4 tsp ground ginger

4 tsp ground cinnamon

1 1/2 tsp cloves

1 1/2 tsp salt

2 large eggs

1 cup unsulfured molasses

For the icing:

1 bag powdered sugar

whites of 3 large eggs

1/2 tsp cream of tartar

1-2 tsp water as needed

Directions

For the gingerbread:

1. Mix dry ingredients together. Beat butter and sugar in a mixer until soft and fluffy.

2. Add eggs and beat until blended.

3. Add dry ingredients and mix until just combined.

4. Divide dough in half and wrap in plastic. Refrigerate for 1 hour while you make icing. Preheat oven to 350°F.

5. Roll out dough to 1/4-inch thick on a floured surface.

6. Cut with snowflake cookie cutters and place on a cookie sheet. Use a toothpick to make a small hole in each snowflake for threading into an ornament.

7. Bake at 350°F for 10-12 minutes. Cool on a rack and then in the freezer.

For the icing:

1. Beat all ingredients in a mixing bowl for 4-5 minutes until super soft and shiny. Add water a little at a time until icing barely peaks and holds its shape.

2. For easy piping, place a cup of the royal icing into a small plastic bag and snip off the corner.

3. Pipe the icing onto the chilled gingerbread snowflake ornaments in varied designs.

4. Allow the icing to harden onto the cookies and then thread a couple inches of twine or ribbon through the holes to make the cookies into ornaments. Hang and enjoy!
