Citrus Fennel Salad Recipe

This savory citrus salad combines yellow and ruby-red grapefruit for a colorful display. Aromatic fennel adds crunch to this easy winter salad.

Ingredients

1/3 cup Conte Belicino Sicilian Extra Virgin Olive Oil

1 1/2 tsp Dijon mustard

1 tsp honey

1/4 cup fresh squeezed lemon juice

1 tsp fresh chopped fennel fronds

Borrometi Fine Sicilian Sea Salt to taste

pepper to taste

5 oz baby arugula

1 bulb fennel, sliced

1 marsh grapefruit, segmented

1 star ruby grapefruit, segmented

shaved Parmesan cheese, for garnish

Directions

1. Make the dressing by whisking together olive oil, mustard, honey, lemon juice and fennel fronds. Season with salt and pepper. Set aside.

2. Onto a platter, assemble salad by layering arugula, fennel and grapefruit.

3. Drizzle with dressing and garnish with shaved Parmesan cheese. Serve immediately.
