Now you’re set with a new ice cream cone tray, it’s time to make cones and ice cream!
We’ve sampled several different waffle cone recipes, and I’ve included our favorite below. I substitute the butter for coconut oil, giving them a slightly tropical taste.
To add coconut to the edges of the cone simple melt some white chocolate chips in a glass bowl in the microwave for 30-45 seconds and stir until melted. Dip each cone into the chocolate, then into a bowl of coconut flakes and set in the ice cream tray to harden.
This would also be fun with dark chocolate and toffee or sprinkles!
Coconut Waffle Cone Recipe (adapted from Bon Appetit)
- 3/4 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 3/4 cup plus 2 tablespoons powdered sugar, divided
- 3 large egg whites
- 5 tablespoons coconut oil, melted
- non-stick spray
- a waffle cone maker
Beat egg whites and 2 tablespoons powdered sugar until stiff peaks form. Whisk remaining dry ingredients together and gently fold in egg white mixture. Add melted coconut oil. Prepare waffle iron according to directions. Spray with non-stick coating and add 1/4 cup waffle cone batter per cone. Quickly remove and roll with the included waffle cone form, then place into the ice cream cone tray to finish hardening.
