The tarts are a cross between lemon bars and raspberry bars and mini bites of pie. They are also a fun dessert to make with kids since no cooking is required, and everyone can take turns licking curd off the spoons and whipped cream off the beaters! (After I made these, I may or may not have spooned out some curd, topped with a little whipped cream, and repeated for several bites for myself and my kids.) Just make sure you do this after you fill all the tarts so you don’t end up eating it all up before the tarts are made!
