These No-Bake Chocolate Peanut Butter Chia Protein Bars taste like an indulgent treat, but they are chock-full of protein, vitamins, minerals, and fiber making them a healthy after school or post-workout snack.
I often buy protein bars for my kids and myself after our various sports activities—more for the convenience than anything else—but I realize that homemade snacks are better for our health (and likely taste better, too). When I have a few extra minutes, I whip up several batches of these bars. I will make several different flavor varieties, too. This way, I can control which ingredients go into which bars and there aren’t any extra fillers or unnecessary ingredients. An added bonus: my kids love helping make the protein bars since only measuring and mixing is involved.
I am a big fan of adding in chia to salads, smoothies and protein bars. Chia seeds are not only loaded with protein and fiber, but they are also loaded with antioxidants, high in omega-3 fatty acids, and a great source of minerals such as phosphorous and magnesium (all important minerals for aiding your body in recovery from a strenuous workout).
