Mother’s Day is all about breakfast in bed, getting pampered, sipping mimosas, and eating yummy food. At least that’s what this Mom’s dream is! My Coconut Brioche French Toast with Guava Syrup and Guava-Rosé Mimosas make for the perfect Mother’s Day breakfast in bed.

Anyone who knows me knows how much I love French toast. I have a penchant for thick sweet bread, such as challah or brioche, and coconut custard works well with this type of bread. The coconut chips add crunch and an extra layer of coconut goodness. Yum.

I discovered guava syrup while on vacation in Oahu years ago at a restaurant famous for its guava chiffon pancakes. Simple, tropical ingredients make a delicious guava syrup that goes perfectly with the coconut brioche French toast.

Brunch isn’t complete without mimosas. I have never been a big fan of orange juice, so I often use pineapple or mango juice, but my absolute favorite is guava juice; I call them guavamosas. They are great with Prosecco, but I prefer to make them with a sparkling rosé.
