I’ll be honest, the thought of having to prepare a bunch of meals on Sunday night can sound a little time consuming. But when I came across these meal prep lunch containers I was instantly inspired, and I hope that you will be too. Meal Prep 101
These fun lunch containers paired with easily prepared international food items from World Market will make prepping meals for the week go by quickly. I start out by taking these flavorful roasted red pepper and artichoke quinoa cups as the base of each container. Feel free to mix and match a few flavors. Healthy Food Tastes Good
The next thing I do is make a simple marinade for a few chicken breasts. Four or five breasts will be more than enough to fill each of your lunch containers. While the chicken is marinating we’re going to make the easiest Mediterranean salad. Divide your salad into one of the small compartments of your lunch containers and fill the other small space with kalamata olives.
The last step to your Mediterranean meal prep is grilling your marinated chicken breasts. Chicken breasts are a great addition to meal prep menus because they’re cost effective and will taste great if they are served cold or hot. I use an indoor grill pan but you could also bake them for 20-25 minutes in the oven. Slice up your chicken breasts and place them right on top of your quinoa base!
