Greek Pie Instructions
Preheat the oven to 375 degrees. Place the crust on a cookie sheet. In a medium size bowl, mix the eggs, cream, and olive spread. Spread the sun-dried tomato spread onto the bottom of the crust. Layer the chopped spinach onto the tomato spread and pour the cream mixture evenly over the top. Bake until the filling is puffed and a knife inserted into the center comes out clean (30 to 40 minutes). Let stand 10 minutes before serving.
Pie Crust Recipe
1 1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon World Market Greek Seasoning
1/2 cup (1 stick) of unsalted butter, very cold
2 Tablespoons vegetable shorting, very cold (this helps stabilize the crust for designs)
3 to 5 Tablespoons ice water
1 egg and a little water whisked together for egg wash
Whisk together the flour, salt, and Greek Seasoning. Cut in the cold butter and shortening with a pastry blender or two forks until it resembles coarse crumbs. Add the ice water lifting the ingredients with a fork and gently mixing them until the dough just holds together.
To “blind bake” the crust, the preferred method for quiche and other custards, roll out the dough and place it into your pie pan. At this time you can shape or decorate the rim. Chill the crust in the refrigerator for 30 minutes. While the pie crust is chilling, pre-heat your oven to 425 degrees. Layer 2 pieces of foil across the pie crust so that all the edges are covered, add pie weights or dried beans to weigh down the dough and keep it from puffing up. Bake for 15 minutes. Remove from the oven, take the weights and foil out, prick the bottom and sides gently with a fork, and brush with the egg wash. Return the oven for 5 to 10 minutes until the egg wash is golden and set. The crust is now ready for filling!
