What better way to beat the heat than with a refreshing popsicle? Making them at home is incredibly easy, and the flavor options are nearly endless.

Lately, I have been making and enjoying these delicious coconut-mint and blueberry popsicles. They feature some of my favorite summertime flavors in a unique combination; the creamy coconut milk, fresh blueberries, and refreshing mint come together in a delightful way. There is a bit of prepwork involved in this recipe, but taking the time to infuse the coconut milk with mint pays off in the end.

I really loved using this popsicle mold because the set comes with slots for easily placing the included wood popsicle sticks, which make these summertime treats feel all the more classic. So in my mind, the hardest part of making these popsicles at home is just waiting for them to freeze; but hey, thankfully they’re worth the wait!

    YUM! These look so delicious and I would love to make them but I want to know if the popsicle molds pictured are available at World Market. If not, where did you get them? They are just what I have been looking for!

    These popsicles look great! Especially since we all seem to be having difficulties with regular milk anymore. Where did you get the popsicle molds? I would love to get them so I can try this out. Please let me know.
