The warmer months are finally upon us, and what better way to enjoy these bright and sunny days than with a refreshing spicy pineapple margarita? There are so many flavor options when it comes to making a margarita, and this particular recipe is one of my favorites.
Infusing tequila is a wonderful way to add another dimension of flavor to any drink, and in this case the heat from the jalapeños gives this drink a pleasant kick of heat. When making this drink I highly recommend using a high-quality reposado tequila, like Espolòn, which I promise will make a world of difference in the overall flavor of your drink.
Since the tequila takes some time to infuse, I like to think ahead and make a batch of this at the beginning of the week; that way I’ll have a spicy tequila to enjoy come the weekend. I personally find the process of making margaritas to be such an enjoyable activity, so I went the extra mile and made some guacamole, too! I mean, it only makes sense, right? I absolutely love guacamole, and preparing it in a traditional molcajete is a wonderful experience. What’s especially great about using a molcajete is that it makes for a wonderful serving dish, so I can present the guacamole as soon as it’s ready.
