I think it’s just an extra excuse to throw a log on the fire (or pull out that cashmere sweater you’ve been waiting to wear) and settle in for the night with good friends…or just a good book. Goodness, we could all use a little downtime this time of year!

So in the name of cold cocktails, we’re updating the classic Moscow Mule and all it’s frosted glory by switching things up with pomegranate molasses and spiced bourbon – two flavors that scream seasonal spice! This cocktail might be one of the easier kinds to assemble, but it will definitely not disappoint on complex notes. The creamy bourbon mellows out the brightness of the fresh pomegranate, and the molasses is a vibrant and rich touch that makes for a very playful and unexpected treat.

The key to mule perfection is getting that ice crushed down, and having lots of it. A little trick I’ll share with you: I like to place the mugs filled (better yet toppling!) with ice into the freezer for 5-10 minutes before pouring the cocktail on top, making for a VERY cold mug and ice that won’t start to melt into your drink too quickly.

Not a bourbon fan? No worries! This cocktail’s tartness would also sing nicely with vodka, making it more of a classic mule with a bit more sweetness from the pomegranate molasses. So get those cute copper mugs frosted and pull on some wool socks because we’ve got some evening cozy sipping to get to.
