You can serve this holiday appetizer as they are cooked, especially if you are the type of host to have the party in the kitchen, or you can make them ahead and re-crisp them in a 375°F oven for 5 minutes and then serve with the sauce.

When you are chopping your broccoli, don’t toss those stems!  Trim the bottoms, and if the skin is thick peel it off with a vegetable peeler before chopping along with the tops. You need to chop it pretty finely, so that it doesn’t cause the pancakes to fall apart.
