If there’s any time of year to infuse herbaceous flavors into, well, everything, it’s autumn. Fresh sage is one of those nostalgic flavors of the season, and though most feel limited to adding it to their favorite roast recipe, we’ve got an easy way to infuse those fragrant woodsy flavors into your holiday bevvies too — with a simple syrup!

Sage and gin are fast friends in the flavor department, so there was no question that we’d like to give an autumn update to a classic gin cocktail: The Bee’s Knees.

This drink is sweet, tangy and has hints of juniper from the gin. It’s the perfect flavor combination to add in the subtle yet bold flavors of sage.

A Sweet, Savory Gin Cocktail

This simple syrup is perfectly balanced while being both savory and sweet. The gin cocktail has warmth in its flavors, yet it’s incredibly refreshing. A perfect sip for a cozy gathering on a chilly evening. I suggest making a large batch of syrup and saving it for other holiday recipes.

Adding it to homemade ice cream over apple pie would be an out of this world use of your leftovers. Yes, that’s right — ice cream! Fun fact: you can use any homemade simple syrup as your sweetener when it comes to whipping up your own creamy scoops. Just think of the possibilities!
