Rated 5 out of 5 by My Tea Palate has Arrived in Paradise! WOW! What a beautifully confusing mix of opposites this brew possesses. Inhale and contemplate the aroma before you sip this sweet, full, smooth, buttery and silky brew! Not a bit of grassy earthiness. Sweet, light and clean, yet deep and buttery. It is actually full-bodied (for a smooth white). I know my description seems to be oxymoronic ... but Bai Mu Dan (White Peony) Loose Leaf Tea is the most fragrant and deeply flavored white I have ever tasted. The color is a transparent, deep yellow; lovely. 1. Pre-warm 38 ounce tetsubin 2. Add ¼ cup tea leaves to infuser 3. Bring cold water to a near boil 4. High pour 190-degree water over leaves allowing water to cool and aerate before contacting leaves 5. Stir leaves about 6. Place lidded tetsubin on warmer; cover top to retain heat 7. Steep 5 minutes 8. Remove infuser (save leaves for second brewing of 7-9 minute steep) Best slowly inhaled and sipped without adding anything. Only add light honey if absolutely necessary. You'll find yourself feeling satiated if this tea is enjoyed before a meal. Dedicate one tetsubin to this superb tea! You don't want to mix flavors and confuse the brew.
