I have been buying this spice mix at Persian stores and online for over ten years and am so glad to finally see it at the World Market. The ground beef kabobs using this spice mix taste exactly like those you get at Persian restaurants and are so quick and easy to make. My only pet peeve with this product is that it does not have instructions on the package on how to use it, so you have to go to the manufacturer's website to look them up. Here's how I use this - place ground beef into a food processor with the blade attachment, add the spice mix and water and let the food processor chop/mix for about a minute or two until the meat becomes slightly lighter in color and the entire mixture is now fragrant. I use 1 oz of the spice mix for 1 lb of ground beef (yes, you chop the already ground beef in the food processor), and about a teaspoon or 2 of water (I believe some of the spices in the mixture may be water soluble, so don't skip the water). You can put the mixture onto traditional skewers or simply form into long sausages and grill. For a more authentic kebab, you may also grind some raw onion with the meat, in which case reduce /skip the water since the onions will release quite a bit of juice and you don't want the mixture to be too runny as it would be difficult to form.
