So good we eat it in the summer! This soup is (next to my grandma's homemade vegetable soup), the best I have ever had. I make it about every 2 weeks for my family and everyone gobbles it up! My family loves hot and spicy so I add 2 cans diced jalapenos,2 cans hot diced green chilies, 1 1/2 lb shredded chicken, and a cup of chicken stock for extra broth. I cook it in my crockpot for about 6-7 hours so the rice isn't crunchy. I serve it with a dollop of sour cream on top, chives, a little cheddar cheese and crushed tortilla chips, oh and can't forget the cornbread as well. Left overs last maybe 4-5 days. September 1, 2013
Great crock pot meal Ignore the directions. Put 1-2 lbs chicken breast into a crock pot, pour the seasoning over the chicken, then about 32 oz of chicken stock and cook on low for 8-10 hours. Just before it's done pour in some sweet corn. I also sometimes put in a can of tomato paste for extra flavor or a jar of salsa at the start all depending on what I have on hand. You'll get a tortilla 'stew'--thick and delicious and great with some sour cream, cheese, and chips for dipping! September 18, 2012
Really Good! I was very surprised at the flavor of this soup. I am not a soup person normally but I loved this and so did my very picky husband!!! I only added corn and chicken to it and I am sad to say the left overs are almost gone :( I will be buying this one again and trying more of the others as this one was quick and very easy to make!!! Great the way it is. Love it for its rich, dark, full flavor. Not too spicy for my wife. Added fresh chopped cilantro, dollop of sour cream, squeeze of lime juice, and several tortilla chips to each bowl. Might add small can of corn and fresh chopped onion next time, and maybe a splash of Melinda's XXXXtra Hot Habanero sauce. December 19, 2011

Excellent Really easy to make. I too cut out a cup of water and replace with a can of petite diced tomatoes. I also double the chicken and add a packet of taco seasoning. Really good topped with sour cream. November 22, 2011
All time family favorite. Have made this more than once- went to visit parents before father had surgery made a batch to put in their freezer- they loved it.Would recommend using chicken breasts with bones not a boneless. Really adds flavor - the longer it simmers the better. I added the items above to beef up the flavor and make it heartier- not required but really makes for a soup meal.This soup freezes like a breeze. Nice alternative if you are taking a lunch to work or just don't feel like cooking. November 8, 2011
