This is a quality, organic sunflower oil (neutral flavor) with black truffle essence (potent) manufactured in California (high standards). I've used many truffle oils in the past and this one is an excellent value. Most truffle oils are infused with 2,4-dithiapentane aka 'truffle essence' in olive oil (which has a low smoke point, degrades fast and competes with truffle aroma) but cost a lot more for less truffle-ness or are total duds. This does add truffle aroma to everything I drizzle it on (before serving, at the end), and has flavor. It's a very strong truffle experience layered with truffle salt - which carries much more earthy truffle flavor than the oil, but salt loses aroma on heated foods which the oil preserves. This oil mixed with butter and the truffle salt is a transcendent artisan toast spread, meat or pasta finish. The pair of oil and salt are great to bring forward the truffle in both taste and aroma. Otherwise, this truffle oil really bursts with the addition of pink Himalayan, or Hawaiian red clay salt. I've only had this oil opened for a week, so I'm not sure about it's aroma length, but I'm really pleased so far. The attractive Tourangelle oil can won't allow light in to degrade the oil - which is great. Conveniently secure cap and pour nozzle snap shut to reduce air exposure. It's lightweight to handle, 2" diameter by 5.5" high can takes up very little space on a spice shelf or condiment display. Worth it.
