Spicy Spanish-Style Entertaining

It's the perfect time to turn up the heat on your next fiesta with Spanish-style dishes and delicious chilled sangria!

PAELLA PERFECTO. This delectable rice-based dish is a centuries-old favorite that originated on the eastern coast of Spain. Usually cooked in a shallow paella pan, the simple rice base blossoms into a fragrant simmering feast with the addition of spices, broths, vegetables and meats such as sausage, chicken or seafood.

Seafood Paella
Get a Spanish-themed evening off to a flavorful start with this authentic recipe from Vigo Paella:

1 package Vigo Paella
Clam broth, chicken broth or vegetable broth (to replace ½ the water in the Vigo Paella recipe)
3 pork or turkey sausages, pre-cooked and thickly sliced
¼ pound seafood mix of mussels, clams and de-veined shrimp, steamed 1 jar Mezzetta or Cucina & Amore Red Peppers

Follow the instructions on the package, but substitute 1/2 of the water using clam broth or chicken broth. Add more broth if the rice looks dry or sticky as you cook. Stir frequently for about 20 minutes. Add the sausages and the entire contents of the jar of Mezzetta or Cucina & Amore Red Peppers and the seafood mix (shells and all) to the pot about 10 minutes before cooking is complete. Serve while hot. Serves 4.

Spanish Sangria
Pick up “101 Sangrias and Pitcher Drinks” by Kim Haasarud, featuring this tasty recipe:

  • 1 bottle Spanish red wine
  • ¼ cup cognac
  • ¼ cup orange curaco
  • ¼ cup simple syrup
  • 2 oranges
  • 2 peaches, cut into cubes
  • 2 lemons, cut into half-wheels

Place all of the ingredients in a large glass or ceramic container and stir well. Cover and refrigerate for at least 4 hours. Serve over ice and garnish with fruit or mint leaves. Serves about 6.
