Main course: Chicken Piccata with World Market® Strozzapreti Pasta
This primo pasta dish combines the best of Italian favor inspiration. Delicious, delightful and completely irresistible - we say "bravo!"
Chicken: Dredge chicken breasts, each side seasoned with salt and pepper, in seasoned flour. Sautée in olive oil and butter each side 3-4 minutes, until each side is golden brown. Set aside and cover with foil.
Sauce: In the same pan, add chopped garlic (2-cloves) and 1/2 chopped shallot sautéed. Add white wine and chicken broth or stock, dash of sea salt to taste. Reduce a bit with 3-4 lemon slices in liquid. Add lemon juice from 3 lemon halves, 2 teaspoons of capers, cream, add 2 additional pats of butter, a dash of chopped parsley. Add a pinch of flour for preferred thickness, taste and adjust as needed.
Pasta: Boil pasta for 15 minutes or so, or until fully cooked to your preference, with salted water and 1 tablespoon of olive oil. Once cooked and drained, put back in pot, add a splash of olive oil so pasta won't stick together, cover and set aside. Quickly flash stir in med/hot pan for 2-4 minutes Add yellow and red cherry tomato halves, dash of fresh chopped, parsley 2 pressed garlic cloves, shallots (the other half from the Piccata sauce), 1 teaspoon of olive oil, a dab of sea salt. Set aside.
Once chicken is complete and ready to plate, mix the pasta ingredients together: Sauté tomato in pasta, grated parmesan cheese, olive oil (2 tablespoons), sea salt, dry roasted pine nuts, 1 handful of fresh chopped basil (larger pieces). Plate pasta and chicken side by side, add sauce over chicken and garnish with parsley.
Dessert: Tiramisu Parfaits
Tiramiso means "pick me up" in Italian, and aptly so! This sweet treat is a true pick-me-up dessert that's become wildly popular from Rome to Reno.
Grind package of Danesita Lady Fingers in food processor, set aside. Mix remaining ingredients together. Layer the lady fingers and mascarpone, alternating with 1/2 tablespoon of crumbs to 1 1/2-2 tablespoons of the mascarpone. Add ground espresso over crumbs prior to layering the mascarpone. Refrigerate for 3 hours.
Topping before serving: Sprinkle cinnamon, cocoa powder and World Market® Dark Chocolate Cocoa Mix. Add World Market® Chocolate-Covered Espresso Beans, a mint leave and cookie for garnish. Makes 4-6 servings.
