Cool Recipes: Agua Fresca

Travel to the bustling marketplaces of Mexico, the Caribbean and other regional "hot" spots and you're bound to stumble across this cool, refreshing street stand favorite. Agua Fresca literally translates to Fresh Water, and is thought to have originated in the local fields and fruit orchards to revive weary workers during the midday lunch. Traditionally infused with seasonal fruit, herbs, flowers and seeds, this tasty concoction is used as a palate cleanser, and it offers a natural balance to rich, spicy foods.

Below you'll find two fabulous Agua Fresca recipes - just right for entertaining and sunny day sipping. (Tip: Rum, tequila or other favorite spirits can be added to taste for summertime parties!)

Strawberry Watermelon Agua Fresca

Ingredients
1 lb. diced seedless or seeded watermelon (about 3-4 cups)
8 oz. halved strawberries (about a pint)
1 Tbsp. lemon or lime juice
1 Tbsp. sugar
1/4 to 1/2 cup cold water

Directions
Purée ingredients in a blender until smooth. Adjust the ingredients to taste. Chill 30 minutes, then strain, pressing on the solids. Divide among ice-filled glasses. Garnish with strawberry or watermelon slices. Serves 4.

Cucumber Lime Agua Fresca

Ingredients
2 cups chopped peeled cucumbers
1 lime (squeeze out juice)
2 Tbsp. agave syrup
1/2 cup mint
1 cup cold water

Directions
Purée ingredients in a blender until smooth. Adjust the ingredients to taste, add sugar if desired. Chill 30 minutes, then strain, pressing on the solids. Divide among ice-filled glasses. Garnish with cucumber or lime slices. Serves 4.
